Ascension’s annual Wild Ferm, Single Orchard, Single Variety, Discovery Cider, using fruit from the 24/25 growing season. Discovery apples were pressed directly into tank, before fermenting with the wild orchard yeasts at ambient temperatures, resulting in a slow, gentle fermentation, lasting nearly eleven weeks. The cider was then aged for a further eleven weeks on lees, before being racked and packaged. The slow fermentation has preserved the natural flavours wonderfully, resulting in this bone dry cider tasting surprisingly juicy, with zingy red berries, dry vinous notes, and a subtly funky finish, reminding you of its wild fermentation

Meadowsweet is an iconic and aromatic wild flower. It blossoms in June and flourishes in wet lying areas, burnsides and waterways. We hand pick the fluffy flower heads and soak them in water to prepare a meadowsweet cordial, which is blended with our vintage cider. The flowers add a complimentary fragrance and atmosphere- hints of an Islay malt and yellow spangles.
